Most often in expert practice, utensils made of corrosion-resistant steel and utensils with a non-stick coating are presented for expertise to establish the type and cause of the formation of defects.
Corrosion-resistant metal utensils are designed for cooking, storing food and serving the table. Mandatory requirements for the quality of tableware, in particular, the requirements for corrosion resistance and the content of harmful elements, are aimed at ensuring its safety for human life and health.
The most common defects are operational defects or defects of a latent production nature revealed during usage.
- Operational defects include:
- chips, scratches, cracks, dents, which were formed as a result of mechanical impact on the surface of the pan;
- overheating of utensils, the signs of which are changes in the color of the metal, brown spots on the surface of the metal, discoloration.
Manufacturing defects include foreign inclusions, shells, waviness, burrs, bubbles, etc. These defects can be detected and eliminated at the manufacturing stage, and can also be detected during usage.
The causes of non-stick coating defects can be divided into manufacturing, arising from non-compliance with the technology of application, surface preparation, and operational, arising during the usage of the product.
The most common non-stick coating defects is the swelling of the top layer of the coating, and then its further peeling. This defect can occur both as a result of improper use of cookware with non-stick coating, and be a defect of a hidden production nature. To determine the cause of the formation of blisters, microscopic examinations are carried out, and the state of the metal surface and the top layer of the coating are assessed. Often, the causes of swelling of the coating are poor-quality preparation of the metal for the application of a non-stick coating, violation of the coating technology. On the basis of experimental and microscopic studies, the cause of the formation of a particular defect is established.
